
Poblano peppers, Italian sausage, black beans, corn & onions in an enchilada sauce broth!

Directions

In a large pan on medium heat, add a tablespoon of olive oil. Next add in diced poblano and onion sautéing for 7-8 minutes until vegetables start to soften. Next add in Italian sausage that has been removed from the casing, cooking until sausage is no longer pink. Drain fat.

Add two tablespoons of flour and stir.

Next add in drained corn.

Next add in chicken broth and drained black beans stirring until everything is combined. Bring to a boil, then reduce to a simmer, cooking for 10-15 minutes.


Serve with sour cream, Crispy Jalapenos and freshly chopped cilantro. Enjoy!
